Stuffed Zucchini with Pizza Topping

With this recipe you can make stuffed zucchini with pizza topping for two people within 40 minutes! These pizza zucchini are a healthy and delicious alternative to a traditional pizza. This dish contains fewer calories and more vegetables.

The stuffed courgettes are delicious to eat as a light lunch, evening meal or as a snack with a drink. We filled the courgettes with tomato sauce, bell pepper, mushrooms, onion and salami. However, you can vary with this by adding extra toppings yourself, such as tuna, minced meat or olives. When composing this dish, we also paid attention to the carbohydrates. Due to the zucchini and tomato sauce, the dish contains slightly more carbohydrates.

Tips: As mentioned before, you can adjust or supplement this basic recipe as you wish. By replacing the meat you can, for example, make a vegetarian version. You can also keep the stuffed zucchini with pizza toppings in the fridge for up to 2 days after baking. It is not possible to freeze the courgettes. I hope you like it! Ingredients

2 courgettes

200 gr tomato sauce

1/4 red onion

1/2 green bell pepper

125 gr mushrooms

60 gr salami

80 gr grated mozzarella

Italian herbs to taste

salt and pepper to taste

Preparation method

Preheat the oven to 200 degrees. Wash the courgettes and cut them in half lengthwise. Remove the pulp with a spoon and set it aside. Then cut the green pepper, mushrooms, onion and salami into small pieces.

Take the courgettes and place them in a greased oven dish. Fill the 4 hollowed out courgettes with the tomato sauce.

Then divide the sliced ​​vegetables and salami over the courgettes. Season the stuffed courgettes with Italian herbs, salt and pepper.

Finally, sprinkle the courgettes with grated mozzarella and cover the dish with aluminum foil. Bake the courgettes for 15 minutes in the preheated oven. Then remove the foil and bake for another 10 minutes.
