Salmon Teriyaki with Broccoli Rice

Fancy an easy and fresh low-carb evening meal? Then this salmon teriyaki with broccoli rice is perfect. This oriental meal is super tasty, nutritious and healthy. You only need a few ingredients and you can have your plate on the table within 25 minutes.

This makes it an ideal dish for when you don't have a lot of time or inclination to cook. The most important part of this meal is, of course, the teriyaki salmon. We baked the salmon in a homemade teriyaki sauce in the oven. With the salmon we served broccoli rice with onion, lemon and spring onion. A perfect combination between savory and fresh.

By using broccoli rice instead of white rice, the meal contains more vegetables and fewer carbohydrates. For example, a serving contains only 5 g of carbohydrates. This evening meal is therefore also suitable for people who follow a strict keto or low-carbohydrate diet!

Tips: With this recipe you make salmon teriyaki with broccoli rice for two people. If you're not a fan of broccoli rice, you can replace it with cauliflower rice or another low-carb rice. You can also add extra vegetables, such as asparagus or a salad.

Ingredients

Salmon teriyaki

2 salmon fillets

50 ml soy sauce

50ml water

1 clove garlic, crushed

3 cm fresh ginger, grated

1 tbsp wok oil

1 tsp arrowroot

Optional:

1 tbsp erythritol

1 tbsp sesame seeds broccoli rice

400 gr broccoli rice

1 tbsp olive oil

1 shallot

2 lemon slices

1 stalk spring onion

salt and pepper to taste

Preparation method

Preheat the oven to 180 degrees. In a small saucepan, combine the soy sauce, crushed garlic, grated ginger, wok oil, arrowroot and water.

Place the pan on the stove and bring it to a boil. Let it cook for about 2-3 minutes, until the sauce has thickened slightly. Place the salmon fillets in a small oven dish and pour the sauce over the salmon fillets. Now take a spoon or kitchen brush and coat the zam fillets well with the sauce in the dish.

Bake the salmon teriyaki in the preheated oven for 15 minutes. Meanwhile, finely chop a shallot and fry it in a frying pan with olive oil. Add the broccoli rice and stir fry within 4-5 minutes.

Season the rice with salt and pepper. Divide the broccoli rice between two plates and set aside. After cooking, place the salmon fillets on the broccoli rice and garnish with chopped spring onions and sesame seeds.

Serve the salmon fillets with a slice of lemon, if desired. Enjoy your meal!
