Omelette with Baby Spinach

A healthy low-carb breakfast or lunch dish: A tasty low-carb main course, omelette with baby spinach. This is a delicious egg recipe with Parmesan cheese, baby spinach, nutmeg and onion powder.

The baby spinach is harvested young and therefore has an extra tender taste. This makes it ideal for stir-frying. Baby spinach is also very healthy. It contains decent amounts of vitamins A, C, E and K.

Ingredients

2–3 medium eggs

30 g baby spinach, cut into pieces

10 g Parmesan cheese, grated

1/4 tsp onion powder

1/8 tsp nutmeg

Salt and pepper to taste

Preparation method

In a large bowl, beat the eggs and add the spinach and Parmesan cheese, stirring. Season with onion powder, nutmeg, salt and pepper. Grease a small skillet with butter or oil and heat over medium heat.

Add the egg mixture to the pan and cook the omelette for about 3 minutes on one side. Then flip the omelette with a spatula and cook for another 3 minutes. Now lower the heat and cook for another 2 minutes. Enjoy your meal!
