Mini Frittatas

A delicious Italian muffin recipe! Frittata is a dish originating from Italy. It is a dish born of poverty. In the past, many Italians in rural areas did not have enough money to make a new meal every day. They used leftovers from the previous meal to make a savory pancake or muffin. In the past, a fritatta was often made from egg, vegetables and pasta.

Nowadays, fritatta is made from egg, grated cheese, onion, ricotta and vegetables. It is actually a mix between an omelet, pizza and pancake. The main ingredients of the fritatta are low in carbohydrates. People who follow the low-carbohydrate diet can therefore enjoy this Italian specialty without feeling guilty.

250 g ricotta

160g frozen chopped spinach, thawed and drained

40 gr grated Parmesan cheese

40 gr grated cheddar cheese

4 medium eggs

2 tbsp sour cream

60 ml milk

1/4 tsp hot pepper sauce

1/4 tsp ground black pepper

1 tsp ground cumin

1/2 tsp lemon pepper

2 tbsp dried parsley

3 tbsp salsa

Preparation method

Preheat the oven to 190 degrees and grease a muffin tin – 12 pieces with butter. In a medium bowl, combine the spinach, ricotta cheese, sour cream, Parmesan and Cheddar cheese.

In another bowl, whisk together the eggs, milk, hot pepper sauce, ground cumin, black pepper, parsley and lemon pepper. Pour the egg mixture into the spinach mixture and mix well. Spoon the mixture into the greased muffin tin.

Bake the frittatas in the preheated oven for 20 to 25 minutes. Let cool for 5 minutes. Carefully remove the mini frittatas from the muffin tin and serve.
