Low Carb Shepherds Pie 

On a rainy autumn day, nothing is better than a spicy and well-filled oven dish. At our house we often opt for a traditional chicory dish on such an autumn day, but today we tried something new. We made a low-carb Shepherd's pie!

This savory tart from our English neighbors is actually not a cake at all, but a casserole. It consists of spicy minced meat topped with a layer of creamy mashed potatoes. However, we have replaced the mashed potatoes with cauliflower puree. As a result, a serving contains only 10.8 g of carbohydrates. In addition, the addition of the cauliflower puree also makes the dish much healthier!

The difference with a regular Shepherd's pie is almost impossible to taste. The dish has a soft structure and a delicious spicy taste. In short, a delicious oven dish that the whole family can enjoy.

Tips! This is a basic low carb Shepherd's pie recipe. You can add additional herbs to taste, such as rosemary, thyme and Worcestershire sauce.

With this recipe you can make a Shepherd's pie for about 4 people. You can serve the dish with a side dish, such as a salad or soup. The casserole will keep well in the fridge for at least 2 days.

Ingredients

Minced meat

1 small onion

2 cloves of garlic

1 carrot

1 tbsp olive oil

500 gr minced beef

1 zucchini

400 g canned diced tomatoes

1 bay leaf

1/2 vegetable stock cube

Optional:

2 tsp arrowroot s

alt and pepper to taste

Topping

1 small cauliflower

20 butter, unsalted

50 ml whipped cream

50 gr grated cheese for oven gratin

salt and pepper to taste

Preparation method

Cut the onion and carrot into small pieces and crush the garlic. Heat a tablespoon of olive oil in a large frying pan and add the onion and garlic. Saute the onion and garlic until the onions start to brown. Then add the chopped carrot and fry for a few minutes.

Add the ground beef to the pan and cook while stirring. Meanwhile, cut the zucchini into small cubes. When the mincemeat is cooked, add the zucchini, diced tomatoes, stock cube and the bay leaf and let it simmer over a low heat for 10 minutes, until the sauce has thickened.

Then season the minced meat with salt and pepper. You can make the sauce thicker by adding 2 tsp arrowroot. Now preheat the oven to 175 degrees. Take the cauliflower and cut it into florets. Then bring a pan of water to the boil and add the cauliflower florets.

Boil the florets for about 8-10 minutes. Pour the contents of the pan into a colander and let the florets drain well. The drier the florets, the tastier the puree. Then put the drained florets back in the pan. Then add the butter, cream, cheese, salt and pepper to the pan and mix with a hand blender until smooth.

Remove the bay leaf from the pan with the minced meat and divide the minced meat over a large oven dish. Spoon the cauliflower puree over this and then spread the puree evenly over the dish with a spoon. Finally sprinkle the dish with a little cheese Bake the Shepherds pie in the preheated oven for 25 minutes. Cut the pie into 4 equal pieces after baking and enjoy!
