Low-Carb Mini Sausage Rolls

Mini sausage rolls are an indispensable part of our Christmas breakfast or brunch at home. When I was a kid I always made them with ready-made puff pastry sheets. Nowadays I make them with low-carb cheese dough. This variant is also super tasty and almost indistinguishable from the traditional sausage rolls. We made these low-carbohydrate mini sausage rolls with cheese dough, also known as fathead dough. This is dough made from grated mozzarella, cream cheese and almond flour. The dough is somewhat similar in structure to pizza dough and has a delicious savory cheese taste. We've used the dough before for a low carb pizza, garlic bread and foccacia!

We have also prepared the sandwiches in the traditional way with cocktail sausages and decorated with egg yolk. Tips Make sure you roll out the fathead dough well between the baking paper. The thinner the crispier your sausage rolls will be. If the dough does not want to work, you can warm it briefly in the microwave. The sausage rolls can be stored in the refrigerator after preparation or frozen.

Ingredients

 

150 g grated mozzarella

25 gr cream cheese

55 gr almond flour

1 medium egg, split

1/2 tsp baking powder

1 can cocktail sausages (400 gr)

Optional: handful of sesame seeds

Preparation method

Preheat the oven to 175 degrees. Add the shredded mozzarella and cream cheese to a large heatproof bowl. Place the bowl in the microwave and heat the cheese for 30 seconds. Then stir briefly and then heat for another 30 seconds, until the cheese has melted.

Meanwhile, separate the eggs into two bowls. The white in one bowl and the yolk in the other. Now take a mixing bowl and add the almond flour and baking powder. Remove the melted cheese from the microwave and add it to the mixing bowl while stirring. Knead the dough well with your hands and add the egg white while kneading. Add a little almond flour if the dough is too wet. Now take two sheets of baking paper and place the dough ball between them.

Roll out the dough with a rolling pin into a wide and thin sheet. Cut the dough into 6 long strips and cut each strip into 2 pieces. Then cut each piece in half diagonally to form a triangle. Then drain the can with the cocktail sausages. Place a cocktail sausage on each triangle of dough and roll up like a croissant. Place the mini sausage rolls on a baking tray and brush the rolls with the beaten egg yolk. Sprinkle with sesame seeds for extra flavour.

If you have pieces of dough left over, you can warm them briefly in the microwave and then roll them out again between baking paper. Bake the sausage rolls for about 18-20 minutes in the preheated oven. Serve with your favorite dipping sauce and enjoy!
