Low-Carb Chicken Meatballs
Meatballs with avocado dip are delicious!
These low-carb chicken meatballs are great for lunch or a snack with drinks. The meatballs were made with minced chicken, zucchini, spring onion, and herbs. Zucchini in a meatball? Yes, please.
It may sound strange, but the zucchini serves an important purpose. The grated zucchini helps to keep the meatballs moist. It also adds a fresh flavor to the chicken meatballs. Serve the chicken meatballs with your preferred dipping sauce. Personally, I enjoy the meatballs with avocado dip.
Meatballs made from chicken:
450 g chicken mince
1 medium zucchini (300 gr)
2–3 spring onion stalks
3 tablespoons parsley
1 garlic clove
1 teaspoon black pepper
1/2 teaspoon cumin
2 tablespoons olive oil
Dip with avocado:
a single avocado
1/4 cup red onion
1/2 tomato, seasoned with salt and pepper to taste
Method of preparation
Using a hand grater, grate the zucchini over a large mixing bowl. Then, place a clean tea towel over a large bowl. Fill a tea towel halfway with grated zucchini. Wring out all the moisture in your clean tea towel with the zucchini in it. Drain the water from the bowl and pat it dry. After that, add the zucchini to the bowl.
Cut the spring onion into small pieces on a large cutting board and add to the bowl with the zucchini, along with the minced chicken, parsley, and herbs. With a fork, thoroughly combine everything. Then, using an ice cream scoop or your hands, form about 20 balls of the minced meat mixture.
In a frying pan, heat two tablespoons olive oil over medium heat. Cook the chicken meatballs in the pan for 5 to 6 minutes. Then, after 5 minutes, flip the balls over and bake for another 5 minutes. Then, reduce the heat to low and continue to cook the chicken meatballs for a few minutes with the lid on the pan. The chicken meatballs can also be baked in the oven.
Preheat the oven to 205 degrees Fahrenheit and cook the chicken meatballs for 15-20 minutes.
Serve the chicken meatballs with a tasty avocado dip. To make this dip, mash an avocado in a medium-sized mixing bowl. Then, cut the red onion and tomato into small pieces and add them to the bowl with the lemon juice. After seasoning with salt and pepper, the dip is ready!
Serve the chicken meatballs in fives with a dollop of avocado dip and enjoy!
