Ketogenic Breakfast With Curry Eggs

My friends and I have been back to normal since the new year. More fats and proteins and slightly less carbs than we ate in December. Eggs and bacon are therefore a big favorite for breakfast and you can often put them on the menu in a ketogenic diet! In addition, I also think curry and turmeric go great with eggs (got something from your Indo-in-law Ardianne :-).

Turmeric is also a real resistance booster, especially in combination with a pinch of pepper.

Ingredients

40 gr lean bacon strips

2 eggs

4 tbsp soy cream (60 ml)

0.5 tsp turmeric

0.25 tsp garam masala (curry spice)

generous pinch of ground pepper pinch of salt

1 tsp chopped chives

1 tsp coconut oil

Topping Black olives, lettuce, cherry tomatoes, goat cheese

Instructions

Heat a frying pan on medium heat. Fry the lean bacon strips all over and lightly brown, but not crispy (!) Beat the eggs in a bowl with the cream, turmeric, curry spices, salt & pepper and the chives. Add the coconut oil to the lean bacon strips and let it melt.

Pour the egg mixture over the bacon and let stand for 30 seconds. Then fold the egg all around in the pan with a wooden spoon. Then let it stand for another 30 seconds. Then fold in again. Continue until all the egg is set.

Serve the curry eggs immediately.
