Keto Chicken Thighs in Crockpot
This is a simple, delicious keto Mexican chicken thigh recipe that you will want to make again and again, as I do. I love my slow cooker because it allows me to set it and forget it until it's time to eat.
I don't think I have a favorite appliance more than my slow cookers. Yes, I did say "slow cookers" in the plural. I have both a large and a small one because some things are better in one but not the other, and vice versa.
The best dinners are those that are simple to prepare.
As previously stated, I have two vegetarians in the house, so only my oldest son and I consume the chicken. My husband and youngest son have a vegetarian option, which we serve with cauliflower mash or simply steamed vegetables with butter.
I also enjoy Mexican cuisine, so this simple chicken thigh recipe satisfies both of my cravings without requiring too much effort. This is an ideal dinner for any day of the week. I love easy dinners, and ones that leave me with enough leftovers to make another easy dinner are even better.
Simple Meal Preparation
I used a large family size slow cooker (crockpot), but you can easily cut the recipe in half and use a smaller slow cooker (crockpot). However, if you must cook, why not have leftovers for dinner or lunch the next day? It simply makes eating keto easier, and who doesn't love the word "easy"?
INGREDIENTS
3-4 lbs bone-in chicken thighs (about 8 pieces)
1 cup chicken broth 1 oz taco seasoning packet
cream of tartar Green onions are optional.
optional red pepper flakes
INSTRUCTIONS
In a crockpot, combine chicken broth and half of the taco seasoning package.
To blend, whisk everything together.
Place the chicken thighs in the slow cooker and sprinkle the remaining taco seasoning on top.
Push down on the thighs to submerge them slightly.
Cook on low for 4-5 hours or high for 3-4 hours, or until the inside is no longer pink.
Garnish with green onions and red pepper flakes and serve with sour cream (optional).
