Hot Chicken with Cauliflower Rice

It's time again for a tasty and healthy low-carb dinner recipe! This time we made a delicious plate of hot chicken with cauliflower rice. This spicy meal is super tasty, nutritious and healthy. In addition, it is easy to make and quick to prepare. With this recipe you can make a healthy meal for two people within 20 minutes. The hot sauce is the most important part of this dish. The sauce made of onion, garlic, soy sauce, sambal, peanut butter and ketchup has a delicious spicy taste.

It resembles a spicy satay sauce, but without the dominant peanut flavour. In addition to the delicious taste, the sauce also ensures that the chicken remains tender. The spicy sauce in combination with cauliflower rice and cucumber provides a perfect balance between fresh and spicy. In short, a low-carb dish that the whole family can enjoy!

Tips We sweetened the hot sauce a little with the sweetener erythritol. This ensures that the sauce has a slightly sweet taste. You can omit this or replace it with another sweetener.

300 gr chicken cubes

1/2 onion

1 clove of garlic

3 tbsp sugar-free ketchup

400 gr cauliflower rice

1 cucumber

Ingredients

Preparation method

Cut the onion into small pieces on a cutting board and crush the garlic. Add a tablespoon of olive oil to a frying pan and fry the onion and garlic. After about 2 minutes, add the chicken cubes and fry them until cooked through.

When the chicken cubes are cooked and brown, add the ketchup, soy sauce, sambal, peanut butter and erythritol to the pan. Let the contents of the pan simmer for about 5 minutes, until the sauce has thickened. Add some water if the sauce becomes too thick Meanwhile, wok the cauliflower rice in a separate pan.

Then cut the cucumber into slices and divide this together with the rice on two plates. Finally, divide the hot chicken among the plates and garnish with spring onions or fried onions, if desired. Enjoy your meal!
