Greek Salad with Chicken and Tzatziki

Looking for a fresh lunch or light evening meal? Then this Greek salad with chicken and tzatziki is perfect. Greek salads are often made without lettuce leaves. How to make this typical Greek salad with cucumber, tomato, onion, feta and marinated chicken. Serve with fresh tzatziki as a dressing with the salad. We made our own tzatziki especially for this recipe. By making the tzatziki yourself, the salad contains fewer carbohydrates and sugars.

This Greek salad with chicken and tzatziki is fresh, nutritious and super tasty. One serving contains only 7.2 g of carbohydrates. So you can also enjoy this salad if you are on a strict low-carbohydrate or keto diet.

Tips You can prepare this salad a day in advance and store it in the fridge. This makes the salad ideal to take with you as a cold lunch to work or to serve as a quick evening meal. Ingredients

Salad

300 gr chicken tenderloins

1/2 red onion

1 cucumber

3 tomatoes

12 olives

60 g feta

100 g tzatziki

Chicken marinade

3 tbsp sour cream

1 clove garlic, crushed

2 tbsp olive oil

1 tbsp lemon juice

2 tsp oregano

3/4 tsp salt

1/2 tsp black pepper

Preparation method

In a large bowl, combine the ingredients for the chicken marinade. Add the chicken breast strips to the bowl and cover with cling film. Place the bowl in the refrigerator and let the marinade soak for at least an hour.

Heat a tablespoon of olive oil in a frying pan or grease a grill with a little oil.

Place the strips with a spatula in the frying pan or grill and bake them for about 6-8 minutes. Meanwhile, cut the cucumber and tomato into cubes.

Then take the red onion and cut it into cubes or rings. Divide the vegetables between two bowls and add the feta, olives and tzatziki. Allow the chicken strips to cool for a while after cooking and then add them to the bowl.

Garnish the salad with a little fresh parsley, if desired. Enjoy your meal!
