Cauliflower Quiche with Cheese

It's time for another delicious quiche recipe! This time we made a delicious cauliflower quiche. This cauliflower quiche with cheese and bacon is actually a frittata.

We left out the shortcrust pastry and added extra egg and vegetables. This makes the quiche gluten-free and low in carbohydrates. The classic cauliflower and cheese combination gives the quiche a delicious taste. The bacon provides a crunch and an extra tasty savory taste. In short, a delicious quiche that the whole family can enjoy!

Tips! With this recipe you can make a quiche for about 4 people. You can serve the quiche as dinner with a piece of meat, fish and possibly a fresh salad. After baking, you can keep the quiche in the fridge for 2 days. You can then reheat a piece in the oven or microwave.

Ingredients

1 cauliflower

1/2 red onion

1 red bell pepper

125 gr bacon strips

100 gr grated cheese, matured

5 eggs (M)

125 g crème frache

paprika to taste

salt and pepper to taste

Preparation method

Cut the cauliflower into small florets and add the florets to a pan filled with water. Bring this to the boil and pre-cook the cauliflower florets for 10 minutes. Meanwhile, fry the bacon strips until crispy and drain the excess fat after cooking.

Chop the red onion and the bell pepper and fry this briefly in a frying pan with olive oil. Now preheat the oven to 190 degrees and grease a quiche tin well with butter.

Then mix the eggs with the crème frache and grated cheese in a large bowl. Now take the pan with the boiled cauliflower and let the water drain well. If necessary, pat the florets dry with a piece of kitchen paper.

Add the cauliflower florets along with the pre-cooked bacon, bell pepper and onion to the bowl with the eggs and stir until well blended. Season the batter with salt, paprika and pepper and then pour into the greased quiche tin.

Bake the cauliflower in the preheated oven for about 35-40 minutes, until the filling has set. Then cut into 4 pieces and enjoy!
