Cauliflower Nasi with Chicken

Today I made a delicious and healthy low-carb main course: cauliflower nasi with chicken! I made this delicious fried rice with cauliflower rice instead of normal rice.

Furthermore, I prepared the fried rice in the traditional way with only 4 ingredients: chicken, rice, fried vegetables and fried herbs. The fried rice has a nice spicy taste and is filling. In addition, a serving contains only 10.2 g of carbohydrates.

This meal is therefore also suitable for people who follow a low-carbohydrate diet. Tips: This low-carb nasi is ready within 20 minutes. This makes it a perfect dish to make when you don't have much time to cook. To make it as easy as possible, I used a ready-made bumbu nasi spice mix in this recipe.

This spice mix contains approx. 18 gr carbohydrates per 100 gr. In this recipe you use 50 gr and this provides 9 gr extra carbohydrates (2.3 gr p.p.). If you want to minimize the amount of carbohydrates, you can compose your own nasi spice mix.

Ingredients

400 gr cauliflower rice

450 gr nasi / noodles vegetables

400 gr chicken fillet cubes

2 tbsp olive oil or wok oil

50 gr bumbu nasi goreng

2 stalks spring onion

Optional: fried omelette

Preparation method

Heat the olive oil in a large frying pan. Add the chicken breast cubes to the pan and fry within 5-6 minutes. Then cut the chili pepper into small pieces and add it to the pan along with the rest of the vegetables. Fry the vegetables for about 2-3 minutes.

Then add the bumbu nasi goreng to the pan and stir it well through the chicken and vegetables. Meanwhile, fry the cauliflower rice in another frying pan for 2-3 minutes. Add the cauliflower rice to the pan and fry it briefly.

Make an omelette in another frying pan. Divide the cauliflower nasi into 4 portions and serve with chopped spring onion pieces. Enjoy your meal!
