Casserole with Spinach and Minced Meat

Attention Spinach Lovers! Today we made a delicious oven dish with spinach and minced meat. I got the recipe for this delicious casserole from my sister-in-law. She has her grandmother's recipe and regularly makes this spinach dish for my brother.

The dish is made according to the family recipe with spinach, mushrooms, minced meat, slavink, macaroni and cheese sauce. I have slightly modified the original recipe to reduce the amount of carbohydrates. For example, I replaced the macaroni with cauliflower rice and the cheese sauce was not thickened with cornflour, but thickened with cooking cream, cream cheese and grated cheese.

Because of these small adjustments, the casserole contains more vegetables and fewer carbohydrates. For example, a serving contains only 11.6 g of carbohydrates and no less than 300 g of vegetables. Yesterday we all tested the low-carb version and it was a success. Everyone has enjoyed it.

Tips: With this recipe you can make a delicious casserole with spinach for four to five people. You can serve a portion of the dish as a main course at dinner. Serve the dish with a fresh salad or a simple salad mix. You can keep the oven dish in the fridge for up to 2 days after preparation and reheat it later in the oven.

Ingredients

Casserole:

300 gr lean ground beef

3 slave finches

1 onion

1 red bell pepper

250 gr mushrooms

1 clove of garlic

400 gr cauliflower rice

350 gr frozen spinach

2 tomatoes

50 grated cheese for oven gratin

salt and pepper to taste

Optional: chili powder and garlic powder

 

Cheese sauce:

200 ml cooking cream

50 gr cream cheese

2 tbsp butter

50 gr grated cheddar cheese

1/2 tsp mustard

salt and pepper to taste

Preparation method

Preheat the oven to 180 degrees. Then cut the mushrooms, onion and bell pepper into small pieces. Heat a little oil in a frying pan and add the chopped onion. Press the garlic using a garlic press and add this to the pan as well.

Fry this for 1-2 minutes, until the onion starts to brown. Add the minced meat and fry it. Season the minced meat with salt, pepper and other spices to taste. Finally add the sliced ​​bell pepper and mushrooms and fry for 3 minutes. Drain the excess moisture after baking and set the pan aside. Heat the frozen spinach in a saucepan over a low heat until it is warm.

Then take another frying pan and add a tbsp of butter. Heat the butter and place the slafins in the pan. Bake the slavinken over a low heat for about 20 minutes. Then take another frying pan and stir-fry the cauliflower rice for 2-3 minutes. Season the rice with a little salt and pepper. Now take the pan with the spinach and let the excess moisture drain.

Add the spinach to the pan with the cauliflower rice and stir well. Then add the cauliflower and spinach mixture to the minced meat and stir well. Cut the tomatoes into slices and remove the slafins from the pan when they are cooked. Then cut the sla finches into slices. Now make the cheese sauce in a saucepan. Add the cooking cream, cream cheese and butter to the pan.

Heat this over a low heat, stirring, until everything has melted. Add the grated cheddar and season with mustard, salt and pepper. Stir well and set aside. Now take the oven dish and spoon half of the meat mixture on the bottom. Divide half of the tomato and lettuce slices over it. Pour a little cheese sauce over it and sprinkle with grated cheese. Repeat the above step until you run out of ingredients.

Bake the casserole in the preheated oven for 15-20 minutes, until the cheese is golden brown. After baking, divide the dish into four portions. Enjoy your meal!
