Burrata Salad with Pesto

Today we made a delicious Italian meal salad with burrata. Burrata is an Italian delicacy native to the Puglia region. It is simply a large ball of mozzarella filled with cream and ricotta.

When the burrata is cut open, the creamy core flows out of the cheese. Especially because of this you see burrata more and more on the menu of restaurants. It is a true spectacle to serve! Fortunately, you don't have to go to a restaurant to try this Italian delicacy. Burrata has recently also been available in supermarkets.

We bought it and made a delicious low-carb salad with burrata ourselves. Low carb burrata salad The basis for our burrata salad is arugula, cherry tomatoes, pine nuts and Parmesan cheese. Flavors that go very well with burrata are dried ham and basil.

We have brought these flavors back in the form of prosciutto and green pesto. The result is a delicious creamy salad with many different flavors that complement each other.

The green pesto and the cream from the burrata make up the dressing. Because we left out the croutons, a serving of this salad contains only 7.1 g of carbohydrates.

Tips! With this recipe you can make a meal salad for two people. It is also possible to serve the salad for more people as a side dish. To do this, add more arugula salad mix and cherry tomatoes. The amount of burrata can then remain the same.

Ingredients

150 gr burrata

100 gr arugula salad mix

150 gr cherry tomatoes

50 g prosciutto

40 gr green pesto

1 tbsp olive oil

handful of pine nuts

30 gr Parmesan cheese

Preparation method

On a cutting board, cut the Parma ham and cherry tomatoes into small pieces. Then, in a small bowl, combine the pesto and olive oil to make the dressing.

Divide the lettuce mixture between two plates and decorate with the ham, cherry tomatoes and parmesan cheese. Then carefully cut the burrata in half and place it in the middle of both plates.

Finally, briefly toast the pine nuts in a frying pan and divide this among the plates together with the pesto dressing. Enjoy your meal!
