Brussels Sprouts Dish with Chicken

In the middle of winter means that Brussels sprouts are widely available! We are real Brussels sprout lovers and have already shared a Brussels sprout salad and casserole with Brussels sprouts and bacon with you.

This time we made a nutritious meal dish with Brussels sprouts. Namely a Brussels sprout dish with chicken thigh fillet! This casserole is incredibly tasty, nutritious and super healthy! Brussels sprouts dish with chicken This casserole is very easy to make, yet packed with flavour.

We marinated the chicken thigh fillet in a mustard marinade that combines perfectly with the Brussels sprouts. We also added a lot of cheese and some extra vegetables, such as mushrooms and onion. The fried bacon completes the dish. Tips You can replace the chicken thigh fillet with another type of (vegan) meat. Chicken thigh fillet works very well in this dish, because the chicken stays nice and tender in the oven.

Ingredients

500 gr chicken thigh fillet

2 cloves of garlic

2 tbsp mustard

2 tbsp olive oil

1 tsp finely chopped fresh parsley

1/2 tsp onion powder

1 tbsp lemon juice

500 gr cleaned Brussels sprouts

1/2 onion

250 gr mushrooms

80 gr grated cheese for oven gratin

125 gr bacon strips

salt and pepper to taste

Preparation method

In a bowl, combine the mustard, olive oil, lemon juice, parsley, onion powder, salt and pepper. Crush the garlic and add it to the bowl along with the chicken thighs. Mix everything well and cover with cling film. Let the marinade soak for at least an hour.

When the marinade is almost ready, preheat the oven to 180 degrees. Then bring a pan of water to the boil. Add the cleaned Brussels sprouts and boil them for a maximum of 5 minutes, so that they still have a bite. Meanwhile, cut the onion and mushrooms into small pieces. Briefly fry the onion and mushrooms in a frying pan with olive oil.

Now take the oven dish and grease it with a little olive oil. Spoon some of the precooked Brussels sprouts into the dish. Then add all the fried mushrooms and onions. Sprinkle with grated cheese and then place the marinated chicken thigh fillets in the dish. Finally, divide the remaining Brussels sprouts over the dish and sprinkle with the last bit of cheese. Bake the casserole in the preheated oven for 35 minutes, until the chicken thighs are tender and the cheese has melted.

When the dish is almost ready, fry the bacon strips. You do this by frying the bacon in a frying pan over a high heat. You don't need to use butter or oil. After the baking time, remove the dish from the oven and divide the bacon. Cut into 4 portions and enjoy!
