Broccoli Soup with Leek

Ingredients

1 broccoli

2 leek stalks

1 clove garlic, crushed

splash of olive oil

750ml water

1 vegetable stock cube

200 g crème frache

Pepper to taste

Fresh chives to taste

Preparation method

On a large cutting board, cut the leek into small pieces and the broccoli into florets. Heat a dash of olive oil in a stockpot and add the sliced ​​leek and crushed garlic. Cook for a few minutes until the garlic starts to brown.

Add the broccoli florets, water, stock, pepper and chives to the pan and bring to a boil. Cook the broccoli for 12 minutes with the lid on the pan.

Remove the pan from the heat and puree the contents with an immersion blender until smooth. Put the pan back on the heat and stir in half of the crème frache. Divide the soup between 4 bowls and serve with a tablespoon of crème frache. Enjoy your meal!
