Asparagus Quiche with Ham

Attention asparagus lovers! The asparagus season officially started last weekend. This means that we can finally enjoy asparagus from the Netherlands again.

To celebrate this we made a delicious asparagus quiche with ham. You make this quiche with green asparagus, diced ham, tomatoes, onion, crème frache, cheese and eggs. We have omitted the bottom of puff pastry in this recipe.

This makes the quiche low in carbohydrates and gluten-free. The quiche has a delicious rich taste and creamy structure. The combination of green asparagus, ham and cheese is heavenly.

With this recipe you can make a quiche for four people. One serving contains only 5.2 grams of carbohydrates. You can also eat this asparagus quiche with ham if you follow a strict keto diet.

Tips: This asparagus quiche with ham is delicious to eat for dinner with a fresh salad. After baking, you can freeze the quiche per portion or keep it in the fridge for up to 2 days.

Ingredients

5 eggs

200 gr green asparagus (tips)

200 g crème frache

125 gr ham cubes

100 gr cherry tomatoes

75 gr grated cheese

1 onion

1 tbsp olive oil

pinch of nutmeg

salt and pepper to taste

Preparation method

Preheat the oven to 200 degrees. Remove the bottom of the asparagus and bring a pan of water to a boil. Add the asparagus to the pan and cook until al dente for 4-8 minutes. Meanwhile cut the onion into rings and the cherry tomatoes in half.

Add the onions to a frying pan with olive oil and fry for 2 minutes, until the onion starts to brown. Then add the ham cubes and fry briefly. Grease a quiche tin with a little olive oil and set aside.

Then, in a large bowl, combine the eggs, crème frache, grated cheese, salt, pepper and nutmeg. Add the fried onion and ham cubes and mix well. Divide the cooked asparagus and halved cherry tomatoes over the quiche tin and pour the egg mixture over it.

Bake the asparagus quiche in the preheated oven for 30-35 minutes. After baking, cut the quiche into 4 pieces. Enjoy your meal!
